The story of the paradigm shift for food for health

Feed our brains, our head brain and our gut brain and they will look after us.

 In area across the world we have people living in the blue zones.

People regularly enjoy an active life into their nineties or hundreds simply eating a largely plant based diet. They eat fruit and vegetables grown in their gardens in nutrient rich biologically active soils which have not been denuded of minerals by the long term intense production, typical of modern agriculture with it’s denuded soils.

It is not just what they eat but how. They pick there vegetables from their garden and eat straight away so benefiting from the beneficial bacteria which leads to a healthy gut biology.

They don’t rely on fancy diets, just letting their gut and head brains, their intelligent control system, decide how much and what sort of food they eat.

Contrast this with our modern system where food is produced by industrial chemical farming, is loaded with fats and sugars and deficient in essential micro-nutrients.

There is widespread use of toxic chemicals to control weeds and pests.

All these leads to a compromised gut biology which is an integral part of our intelligent control system so we end up eating more sugary fatty foods – it is a viscous cycle which just gets on getting worse and worse.

What is Gbtiota food?

Gbiotafood was developed to provide the trace minerals and beneficial biology essential to health but missing in our modern food system.

The current health epidemic of diabetes, obesity and dementia is caused by fat in the wrong places. We are obsessed by calories, eat less exercise more and we still keep on getting fatter, and it simply is not working.

It is not that calories don’t matter – it is simply we are missing the point. Weighing our food to the nearest grams and trying to control our calorie intake is just not a workable solution.

Our two brains (head and gut) together regulate what and how much we want to eat.

They have evolved over millions of years to create an intelligent control system which looks after us without us even thinking about it. But they need to be fed gut and brain food and we are just not doing that.

Dr. Lisa Mosconi, an eminent neuroscientist, starts her seminal book ‘Brain food – How to Eat smart and sharpen you mind’ starts her book with two MRI brain scans. The first scan of a person who has been eating a typical western high fat high sugar diet is shrunken and shrivelled the second from a person who has been eating a healthy brain food diet is full and healthy.

The message is clear – we need to feed out brains.

How did Colin get on the brain food road?

When Xiulan, a medical doctor and Colin Austin’s wife, was on the road to becoming a blind cripple from diabetes – Colin, recognised as one of the top one hundred innovators, knew it was time for action.

But innovation is not about being brilliant – it is about challenging the current thinking or paradigm and having the perseverance to continue on developing a new paradigm and getting it accepted.

He realised that some one third of the population was either diabetic, undiagnosed or prediabetic, a cataclysmic health epidemic.

The reason is simple. Our food comes from the soil, by plants or animals that eat plants (or from plankton in the sea). People are much more complex than plants and need a much wider range of nutrients. Traditionally they were just in the soil and simply were taken up by the plants for us to eat.

With modern agriculture we are taking so many nutrients from the soil that we need to replace them, but farmers under economic pressure, just replace the nutrients the plants need so our food has become deficient in the key nutrients essential for human health but not for plants.

Our brains (gut and head brains) sense this lack of the nutrients so even though we may be full we feel hungry and eat more food – typically sugary fatty foods and we get sick.

Just keep on asking why?

He asked a simple question, “How is it that fifty years ago and in societies living a traditional life style there was no ‘fat in the wrong places’ health epidemic and yet with all our modern technology there is, why what is the real cause?”

It is all about the food we eat, high in energy food – sugars and fats but lacking essential nutrients for human health.

We just need to get more of the essential nutrients into our diet then we will automatically stop craving sugary fatty foods which lead to the ‘fat in the wrong places’ diseases – diabetes, obesity and dementia.

Forget about calorie counting and feed our brains

He realised that the current focus on restrictive diets was mistaken, our brains in our head and guts are a highly effective system of managing our bodies but we simply don’t feed them the food that our guts and brains need.

But we used to! For millions of years our brains (both head and gut) have evolved around healthy brain food.

It’s all in the way we grow our food

He decided the answer lies in the way we grow our food and travelled to traditional societies in Africa, Asia and the Americas to study their agriculture, not to imitate, which is impractical, but to understand the differences to help develop new technologies – modernised traditional agriculture.

He developed Gbiota beds, a highly efficient system for growing food with the essential nutrients to feed our guts and head brains – Gbiota food. But that was the easy bit – it may grow healthy food but even more  important is honest food.

Honest food

Scientist who actually take measurements of nutrient levels have known for a long time that our soils are becoming depleted in nutrients. But we live in the information age and information can be equally true or false.

Vegetables like kale, celery or cress which are reputed to be healthy and if they are grown in nutrient rich biologically active soil they will be – but if they are grown in depleted soils and sprayed with toxic chemicals they may actually be harmful.

The tragedy is no-one can tell simply by looking at them, in fact those sprayed with chemicals to keep the pests away may actually look better.

Beneficial biology

But important as mineral are there is an even more important key to health – our gut biology – which depends on what we eat.

There is an ecological balance between beneficial and harmful biology. Why is it that plants do not go rotten while they are growing but as soon as they are harvested they start to go rotten?

Plants take energy from the sun, carbon dioxide from the air and water from the soil to make sugars which they exude to feed microbiology in the soil. In return the soil biology makes nutrients in the soil available to the plants.

There are always good and bad bugs but in a balanced system the good bugs out compete the bad bugs. That is why growing plants in an ecologically balances system don’t go rotten while growing.

But as soon as a plant is harvested the ecological balance is broken and the bad bugs out compete the good bugs.

It is the same in our bodies – there is an ecological balance between beneficial and harmful biology.

Manipulation of the truth

And sad to say the mega corporations in the tobacco, fossil fuel, food, drug and supplement industry have learned it pays to manipulate the truth. How to combat this is an even greater challenge.

Colin’s initial solution was to set up web sites like www.waterright.com.au and www.gbiota.com so people had ready access to real information but these articles can be long so a more immediate solution was needed.

He set up yet another web site www.pickandeat.shop where growers could create their own page showing exactly how they were growing their crops and people could visit the farms and write totally independent revues. But even that was not enough.

Does it work for you?

People want to know if eating this food will really make them, as an individual person, healthy, and they also want to know if this healthy food is just going to taste bland and boring or could it actually be made to taste good.

Modern commercial food tastes good because it is loaded with hidden sugars but although we actually need some sugars the levels in our diets needs to be seriously reduced.

But a good chef knows how to replace the sugars with herbs and spices which actually taste better (after you have adapted by replacing the sugar loving bugs). But the process of adaptation can be rugged as the sugar loving bugs inside the gut put up a fight as they are out competed by the healthy bugs.

Health food cafes

The solution to this was to enlist the help of health food cafes, where people can easily try different foods, meet and make friends with people going through the same process of adaption in a friendly and supportive environment.

Again these health food cafes can create their own page on the www.pickandeat.shop web site to showcase how they manage the entire process of buying fresh from local farms and how the chef uses his skill to create meals which are both tasty and nutritious.

Test for yourself

It is easy for people to test for themselves if this diet is helping them, they can measure there weight and waist size and if they are diabetic measure their blood sugar levels but the simplest and most important test is do they actually feel better?

 

The clash of two societies

It is common for younger people to leave the blue zones, sometimes for jobs, for what they think is a more interesting life style with computers and entertainment and to avoid the hard work of living in the blues zone. They accept negatives of lack of control and manipulation.

They inevitably suffer the same health problems as the rest of us, getting fat and dying young.

This may be extra experimental evidence of the power of the blue zone food but it may seem we have to choose between the two societies – the health benefit of the blue zone or the wealth and entertainment of our modern society and suffer the manipulation and deceptive advertising.

But why do we have to choose? Why can’t we change our modern society to have the health benefits of the blue zone?

That is why I say this is a social movement.
